I love a good breakfast salad, and this Arugula & Soft Scrambled Eggs Breakfast Salad is one of my favorites. This breakfast is easy to prepare and packed with ingredients that support your health with essential nutrients.

It's also high in vitamins A, C, and K, which play roles in maintaining vision, enhancing immune function, and supporting bone health. If arugula isn't for you, you can swap it out for any other dark leafy green.
