The Mediterranean diet has long been celebrated for its health benefits. Today, I’m sharing a delightful recipe that encapsulates the very essence of this diet - the Chickpea Power Salad. Packed with protein, rich in essential nutrients, and brimming with robust flavors, it's a dish that will leave you satisfied and your body thanking you.

Chickpeas are also pretty affordable, making them an excellent choice if you’re eating healthy on a budget.

The cherry tomatoes, quinoa, broccoli, edamame beans, radishes, and pumpkin seeds in this salad are also excellent sources of antioxidants, vitamins, and minerals. Antioxidants, in particular, protect the body from damage caused by free radicals and lower the risk of chronic diseases. Cherry tomatoes and radishes keep you healthy with immune-boosting vitamins.
